- After harvesting, a mature Honey Manila mango is an even light green and ready for shipping.
- The mango turns a lighter green to yellow color as it begins to ripen. At this stage it is still firm and ready to ship to retail.
- The ripening mango is now about half green and half yellow. The fruit is still firm, but on its way to full ripeness.
- As the ripening process continues, the mango turns more yellow and begins to soften slightly. A Fragrant aroma will emanate from the stem end. At this stage the fruit is ready for retail display.
- When a mango has turned completely golden yellow and gives slightly to the touch, it is fully ripe. A slight wrinkling of the skin at this stage is normal.
