After harvesting, a mature Honey Manila mango is an even light green and ready for shipping.
The mango turns a lighter green to yellow color as it begins to ripen. At this stage it is still firm and ready to ship to retail.
The ripening mango is now about half green and half yellow. The fruit is still firm, but on its way to full ripeness.
As the ripening process continues, the mango turns more yellow and begins to soften slightly. A Fragrant aroma will emanate from the stem end. At this stage the fruit is ready for retail display.
When a mango has turned completely golden yellow and gives slightly to the touch, it is fully ripe. A slight wrinkling of the skin at this stage is normal.
