- A firm, mature mango right after harvest is mostly green with sime red blush and a trace of yellow. At this stage the fruit will ship wellwith an excellent shelf life.
- As the mango begins to ripen, it turns a lighter green to yellow, with a light red blush. At this stage it is still firm and ready to ship to retail.
- The ripening mango is now about half green and half yellow. Any red blush will continue to brighten. The fruit is still firm, but on the way to full ripeness.
- As the ripening process continues, the mango turns more yellow and begins to soften slightly. Depending on the variety, there will be varying degrees of red blush. A fragrant aroma will emanate from the stem end. At this stage the fruit is ready for retail display.
- When a mango has turned almost completely yellow with some full bright red blush (depending on the variety), it is ripeand juicy and ready to enjoy!
